Wowsers, the Easter holidays is always a tricky one and with the number of chocolate eggs still floating around our house, I’m doing pretty well to resist temptation.

I’m coming to the end of my time with Diet Chef which I am so grateful to for helping to kick start me on my weightloss journey.

If you have followed my previous posts, you will know that I have thoroughly enjoyed all of the dishes, haven’t felt hungry and the whole concept of the meal plans, fit really well around my lifestyle.

I haven’t been running this week which is really rubbish of me, but I will get back into it. Emma, if you’re reading this, I need you to motivate me!

I still have a few of the Diet Chef meals left but for the most part I will now be on my own. I’m determined to carry on and I will still continue this blog series, if for no other reason than a bit of peer pressure.

Weekly Weigh In ~ Wk 7

Ok, here we go… a hands up moment…

I went out for a mahoosive meal on Thursday as I said ‘goodbye’ to some very dear colleagues at work. It was my leaving do, so I think I’m allowed!

What I did notice was that I couldn’t finish the whole meal, like I usually can. So my stomach must have shrunk.

It’s getting used to the portion sizes as with Diet Chef, the portions are much noticeably smaller (obviously) than I would usually give myself.

It was nice to feel like I could treat myself but I didn’t have a dessert, like I usually would so bonus points there, I reckon!

Here’s my favourites from the Diet Chef menu this week:

Breakfast

Porridge with strawberries, with added fresh strawberries.

I love how sweet and filling this porridge is. It doesn’t need the added fresh strawberries as it’s lovely on it’s own but I do love fresh fruit in the mornings.

Lunch

Tomato, Red Pepper and Cheese Pasta Pot

Snack

Fruit and Spice Oat Biscuits. So scrummy dunked in a cup of tea!

Dinner

Coq au Vin.

I’m sharing this one because it was a delightful surprise. A tender breast of chicken braised with mushrooms and pearl onions in a rich, red wine and stock based sauce and strips of smoked bacon. I added the mashed swede.

Weekly Weigh In ~ Wk 6

I have moved this weekly feature to a Tuesday as I already have my Mindful Monday posts on a Monday.

As regular readers will know, I have been lucky enough to be sent a monthly hamper from Diet Chef. The food really is delicious and I have learnt a lot about portion control, as a result.

What’s really surprised me is how the need to fill my plate with rice if I was having a curry or chilli, was always just because it seemed to be the right companion for the dish. However I have been adding vegetables (usually sweetcorn, it’s my favourite) to these kind of dishes and I haven’t missed the heavy carbs at all.

Diet Chef provide you with a breakfast, lunch, snack and dinner for each day and I like to share with you my favourites for the week. So here are my favourites this week:

Breakfast

Soft Chocolate Cookie with added apple (this took me a while to get used to for a breakfast but it’s a great option if you’re running late in the mornings and time is tight. It’s filling and tastes really good!)

A slow weightloss this week but to be honest, I was expecting to plateau long before now so I’m not too disheartened.

Weekly Weigh In ~ Wk 5

Thank you so much to everyone who has left comments of support and encouragement on this tough journey, we call weight loss!

I’m so thrilled to say that Diet Chef have agreed to provide me with another monthly hamper of their delicious, chef prepared meals. All calorie controlled and delivered straight to your door. What could be easier?

It was so exciting to fill out the meal selections, as this time I knew which dishes and snacks were my absolute favourites and which I would order more of.

In the space of only 4 weeks, I noticed that there were even more options to choose from as Diet Chef had added new yummy meals to the menu.

The hamper arrived 2 days later and it’s lovely to see my cupboard stocked up with Diet Chef; my fruit bowl full of fruit; the salad drawer full to the brim and the veg on stand by.

For the next 4 weeks, I thought I would share with you, my favourite breakfast, lunch, snack and dinner for the week.

2 Buttermilk pancakes with added banana and a tiny splash of maple syrup (this was a new addition to the menu. All week, I was looking forward to the weekend to enjoy this. The kids were so jealous!)

Vanilla Protein Bar (I ordered more of these as they are very filling and of course, covered in chocolate. Say no more!)

Dinner

Chilli Con Carne with kidney beans, added avocado and spring onion (this is my all time favourite dish, I’ve ordered quite a few of these!)

For my 4th week, I have still been following the Diet Chef plan of a calorie controlled breakfast, lunch, dinner and snack each day and enjoying the chef prepared dishes that they have sent me.

This week I enjoyed my Banana and Vanilla porridge for breakfast in bed on Mother’s Day:

Day 28 was Mother’s Day and it has been the only time in a month that I have not had one of the Diet Chef meals for dinner, hence I have included a photo of my beautiful flowers!

I have also been continuing the Couch to 5K run but I only managed 2 out of the 3 runs this week due to the very sad passing of my grandma. My heavy legs could not lift my heavy heart. But I’ll aim to do an extra session next week, Gran will push me through the pain.

Weekly Weigh In ~ Wk 3

Wow, 3 weeks in. And I’m still loving it. I’ve stuck to the meal options from Diet Chef and am delighted to say that I do not feel hungry. I am topping up the meal plans with my own fruit, veg and salad. My favourite meal of the week was the chilli con carne to which I added spring onion and avocado. It was delicious, very filling and I didn’t want the plate of food to end!

For the first time this week, I had a chocolate milkshake as a meal replacement. I was a little apprehensive as 1) I don’t like chocolate milkshake 2) I didn’t think that it would keep the hunger at bay.

I loved it. It was delicious and did in fact keep me going until dinner time.

 I also just wanted to share with you, that I completed all 3 training sessions for the Couch to 5K run, that I started this week.  I hated every minute but felt brilliant once I had done it. Now I have to step it up a gear in Week 2! Wish me luck!

Weekly Weigh In ~ Wk 2

I have been using Diet Chef now for two whole weeks. Is it too early to say, I love it?!

What surprises me beyond measure, is how tasty the food is. I said it last week but I’m really surprised. Very often, Luke looks over at my plate and says he would rather have what I’m having.

As I said last week, I’ve been getting into soups (it’s never been my favourite option for lunch) but I’m growing to enjoy them. The soup portion is on the generous side so I can’t always finish the bowl.

The breakfasts have all been delicious this week and I have been adding a lovely fresh salad to most of my dinners. This was my favourite meal of the week, Macaroni Cheese:

Weekly Weigh In ~ wk 1

Readers of a recent post of mine, The Start of a Long Haul will know that last week, I teamed up with Diet Chef to see if I could reach my weight goals. I had heard great things about Diet Chef and was so pleased when they offered to send me a monthly hamper of chef prepared meals, straight to my door.

So now that I have completed my first full week of Diet Chef, this is the first of my Weekly Weigh In posts.

I’ll be really honest – I didn’t have high hopes for how tasty the actual meals would be. In truth, I’m quite very fussy when it comes to food. I don’t like or eat microwave meals and the main dish on the lunchtime menu, is soup. I never eat soup. I think it’s the texture. Despite being able to select want I wanted from the wide range of meals, I did select a few soups, to add a bit of variety and to see if Diet Chef could actually change my opinion.

Each day, I have had breakfast, lunch, a snack and dinner. I have also teamed the breakfasts with fresh fruit and the dinners with salad or veg.

I can honestly say that the food is delicious. I was very surprised yet delighted that I was still able to look forward to mealtimes. The dinners can be microwaved but as I mentioned earlier, I still tended to cook them in the oven for 25mins, especially as the oven was on with everybody else’s dinner cooking.

My favourites this week were the chicken tikka. It was very mild and so yummy, perfect for me. And the Apple and Cinnamon Porridge was simply delicious.

I must admit, I had to get my head around eating a yummy chocolate cookie as a hearty breakfast, I wasn’t sure that I could stomach it first thing in the morning, or that it was going to fill me up. But teamed with some delicious fresh fruit, I was fighting the kids off it!

And if you’re wondering, I had 3 soups this week: Sweet Potato and Coconut, Tomato and Mushroom. And I finished, very nearly, the whole bowl, each time. I’m looking forward to trying some of the other flavours. My stepson, Ethan had a few slurps of the Tomato soup and said it was the best soup he had ever tasted; high praise indeed!

It’s was Half Term last week, I don’t know if this was an advantage or a hinderance for me starting Diet Chef. There were lots of temptations with the kids eating yummy things and going out on day trips made things tricky for lunch (but I actually made up a pasta pot and had it cold for lunch, which I love anyway.)

Back to work this week so I hope that having an earlier breakfast won’t hold me back at all.

The start of a long haul

I love my children dearly. I wouldn’t change them for the world. But as much as I love them, I do not like the toll that 2 pregnancies have taken on my body.

I have never been ‘slim’. Even when I swam competitively and had to have body fat tests, I was never slim.

But I was a lot lighter on the scales before I had children. I know it’s inevitable that the lbs creep up and I look in envy at friends that shrank back to their pre birth weight in what seemed like a day after giving birth.

I have most definitely not ‘popped’ back into shape. And I most certainly have not shrunk back to the size I once was.

When I’m on a diet or the latest fad, I usually do pretty well as I have a good determination to succeed.

I just can’t sustain it.

It’s when I’m eating as normal, cooking and eating with the rest of the family, that my will power takes a hammering.

So I am beyond excited and thankful to team up with Diet Chef.

I am hopeful that with the support of Diet Chef and the fact that I’m sharing my progress with you guys (a bit of peer pressure) I will achieve my goals or at least be well on the way to achieving them.
